The aroma is of sweet rum and rice.
When you drink it, you will find a little chili, a sweet and delicious taste of rice with a hint of rummy flavor, and a sour and bitter taste that comes slowly to the side of your tongue.
This goes well with the mild autumn flavors! It would also be good with simmered dishes or miso grilled dishes with a sweeter flavor. On this day, it was perfect with saikyo yaki gindara (cod).
The flavor is not too rich and assertive (although it is delicious in its own way), and it finishes smoothly and cleanly. It is not so much that it is sharp...but rather that it disappears quickly, leaving no trace of the bird that stood in its path.
The balance is stable even after a few days.
The acidity comes first, but as it rolls around in the mouth, the sweetness and umami gradually spread, and the mild acidity and slight bitterness bring it to a close.
It was a delicious sake that could be sipped with a meal for a long time.
