Attended the Spring Katano Sakura Sake Festival at the nearby Yamano Sake Brewery before the Kansai Chapter offline meeting.
We enjoyed a variety of activities such as Kagamibiraki (sake barrel breaking), sake tasting, sake kasu (sake lees) giveaway, goods and sake sales, and a tour of the brewery led by the brewery's toji (master brewer) himself👍.
The sake tasting was two 60ml bottles, considering the off-line meeting.
Katanozakura Hana Hitohira" and "Katanozakura Junmai Ginjo".
Katano Sakura Junmai Ginjo Nihonshu Matsuri Betsuatsurai Kamizu Nama
I didn't like the Kami, but I bought the above-mentioned Sake Festival Betsuatsurai raw sake.
Katanozakura Junmai Ginjo (Sake Festival limited edition, raw)
I had it cold.
The cherry blossoms printed on the bottle are wonderful.
The aroma is mild with a hint of sourness.
On the palate, the sourness is strong and at the same time the sweetness spreads to a mild sweet and sour taste.
It is spring-like, cherry-like, and white wine-like 😊.
The toji-san who showed me around the brewery was amazed that they make this kind of wine 😳.
Unlike the white wine feeling of "Katano Sakura Theory" which I drank before, I feel a firm heaviness with an alu aftertaste.
Ingredients: rice(domestic), rice malt(domestic)
Rice used: 100% Gohyakumangoku
Polishing ratio: Koji rice 50%, Kake rice 55
Alcohol content: 17% (original)
