Purchased from Saito Sake Shop in Otawara City, Tochigi Prefecture. Hishiko" brewed by inviting a certain 🍶 production manager from Fukushima. High expectations. Manufactured in 2024.09 Alcohol level is 16 degrees. Rice polishing ratio is 60 The rice used is Yamagata Prefecture's Yamashu No. 4 sake rice. When opened, the aroma is light with a faint 🍐 feeling. Taking a sip, the matured sweetness and roundness first spreads on the tongue. When swallowed, it has a slight sourness, but at the same time the bitterness and astringency stand out. The bitterness lingers as an aftertaste. The quality of the sake is light, as is typical of Niigata Prefecture. The sweetness in the mouth is to the taste. It has a bitter taste that goes down the throat, making it a good choice as a mid-meal sake.
