This sake is made by Kakusei, famous for Suitori Ki.
I found it in Kesennuma where I visited the other day.
I thought it must be a new brand. I thought it was a new brand, but in fact, it is a brand that has been around for a long time. However, it is a sake that basically never leaves Kesennuma, so there are limited opportunities to see it in stores.
The aroma is very unique, and I can't describe it in any way. Personally, I am not a fan of it.
The sweetness and umami are both restrained, and the mouthfeel has a unique aroma that makes you think it is a matured aroma. It has a unique aroma that makes you think, "Is this a matured aroma? The acidity and heavy bitterness make it refreshing, but the maturing aroma that lingers in the back of the nose? It is very peculiar!
The label says "ZYUE" in horizontal characters, so I expected the flavor that is so popular now, but I was pleasantly surprised. I guess this sake is not for everyone. I think it is a sake for selective drinkers.
I don't know if it's the twist or the maturity, but I have a strange feeling that this peculiarity will become addictive, or is it immoral in a sense?
