I don't know if it's because it's been laid down for 4 months at ice temperature, or if it's just the way Genmai Aizan is, but I don't feel the freshness of raw sake. I feel it. The bitterness and sharpness is typical of Genmai. It's too heavy for summer, so it was a good decision to open it after the weather turned cold. It's delicious.
