This is the second sake to be released in August, and it is made with Yume Gochi, an edible rice.
Unusually for Shirakihisa, it has been kept in the brewery for a year.
The aroma is slightly sour like a lactic acid drink.
The taste is soft lactic acidity, sweetness of the rice and a beautiful umami taste, and finally a soft bitterness finishes it off.
Overall the taste is mild and as the back label says dusty😊.
I usually think of it as being juicy and acidic, but it tastes different and delicious💕.

It reminds me of Chivas Regal😁.
The only thing they seem to have in common is that they are aged liquors 💦.

Shirakihisa's limited edition labels are always very elaborate, and last year's autumn sake had a cute Halloween label.
