My favorite doburoku (doburoku) from Takeshige Shuzo, which I thought was only available in winter, is now available in a limited edition, fire-retarded version that can be drunk in early summer!
Compared to raw doburoku, the fermentation process has stopped at the perfect point, so while it is gassy, it has a creamy, light mouthfeel and a mild, rich rice texture and flavor.
Alcohol content: 11 degrees
