I was curious about the sake with the red label on the fridge and asked about it, and was told it was Okura's Shinriki No. 8 yeast. I had never had it before, so I asked for it.
I drank Okura too 🤣.
Since there was only a little left, they put in another bottle of Jinriki x No.1 yeast for the missing amount.
We started with the No. 8 yeast.
The aroma is very strong. It is rich and has a strong umami flavor. The acidity in the latter half is impressive.
The sweetness is more reserved than expected.
The label does not say, but according to the websites of Noboru Sake Shop and Yajima Sake Shop, it seems to be Yamahai 🤔.
I was talking with Umaisan about how it was more like Yamahai than Yamahai No.1 yeast, even though it is not Yamahai 🤣.
I wonder if Okura has Yamahai even though it doesn't say anything else about it?
