I enjoyed the previous Bon (Shiboritate Hatsuyuki) so much I bought another spec!
This is the Yamahai spec, but it is not listed on the label!
The top aroma is a lactic acid aroma.
The lactic acid smell is not that strong.
It has a mild pear-like fruity aroma
It has a rich, medium-dry taste
Soft and mellow on the tongue with a firm taste.
Slightly sweet with a rush of umami bitterness.
In addition to the complex flavors of sweet, umami, and bitter, there is a slight lactic acidity in the aftertaste.
Delicious sake, but I myself would like to taste more sweetness😅.

I'm not a fan of ice aging either.
Maybe that's why I didn't like it so much !
But the new sake Shiboritate is really good, it suits my taste~!
