This sake is only available at Kurosawa Sake Brewery's special distributor that I visited in GW. You can buy the brands Izutsunaga and Maruto at the brewery, and at least the Maruto I sipped was very good sake. How about Kurosawa?
It is lightly cloudy, but I poured it without mixing. It is a cloudy pale yellow color with some cloudiness. You can see bubbles in it.
The aroma is grapey, or rather wine-like. At room temperature, there is a slightly fermented aroma.
The effervescence and aroma give it a champagne-like attack. When the tailings are mixed, the sweetness is moderate, but the umami is very strong, and it is the one that seems to be sweet because it insists until the aftertaste. The bitterness does some work in the middle.
The aroma that comes later is grain-like, so it is not wine-like at all. It's not fair that the acidity makes it so refreshing, even though it feels like you're drinking wine!
When drunk casually, it seems like a muddy sake, but when drunk properly, the detailed characteristics stand out and it's a lot of fun to drink!
Recently I have been drinking sake with a strong ginjo aroma, but I prefer less flashy sake with a low or highly polished rice content, so this early summer evening I was deeply satisfied with the taste.
