Shinshu Kamerei Hitogokochi Junmai-shu Unfiltered Nama-shu
We open a bottle of delicious sake as soon as possible. However, several months have already passed since the new sake was released. Time flies fast, doesn't it?
So I opened a bottle of the new sake.
I drink it cold.
When the bottle is opened, there is a short opening sound.
When poured into a glass, fine bubbles adhere to the glass.
The color is clear with a faint tinge of color.
The nose is gentle and slightly fruity with a hint of ripe fruit.
The mouthfeel is sizzling, tongue-tingling gasiness and acidity.
From the moment it enters the mouth, the taste is clear, without any cloying flavors, but with a deep, full-bodied, sweet flavor. After swallowing, chocolate and caramel flavors spread slightly, and a deep, sweet aroma of ripe fruit spreads from the aroma passing through the nose.
I had an image that it was more of a food sake, but the unfiltered raw sake is juicy and can be drunk on its own.
Ingredients: rice, rice malt
Rice used: 100% Hitogochi grown in Nagano Prefecture
Polishing ratio: 55% for koji rice, 70% for kake rice
Alcohol Content : 15
