Kabishin Fuyu no Tsuki Junmai Ginjo Unfiltered Nama Shuzake
A sake store in the neighborhood sells sake directly from a gyoza (dumpling) maker that for some reason sells wholesale to supermarkets and other stores.
They also carry Harushika's Risshun Asa Shibori and Koshinohomare.
They even sell Hibiki whiskey at a fixed price.
Here is what I bought.
I had it with cold sake.
When I poured it into a glass, I found microbubbles at the bottom of the glass.
The top aroma is mild, with a hint of pineapple and white peach.
The color is clear and almost colorless.
The mouthfeel is slightly viscous on the tongue.
The taste is dark and deliciously bitter with a firm mellowness. It is slightly sweet and has a strong bitter-bitter taste, which reminds one of a slightly classical taste, with a clean aftertaste. This is a rich mellow fruity classical. I don't know.
This year seems to be the 25th year for Winter Moon, and it is made entirely from satoumi rice. This is not a variety, but looks like rice grown by putting oyster shells in the rice paddies and cultivating the soil.
Ingredients: rice (domestic), rice malt (domestic)
Polishing ratio: Kake rice 50%, Koji rice 58
Alcohol Content: 16.5
Yeast: Okayama Hakuto yeast
