The 7th Takashimaya Sake Festival (2) Next is Tanaka Sake Brewery At first, we were served by the waitress, but in the second half, we had a short talk with the proprietress. I was told by Mr. Umaumai to go talk to the proprietress! I was also told to go and talk to the proprietress 😁. What we drank was Shirasagi-no Shiro Junmai Ginjo Kiyoshi Oroshi I regretted not buying this at the same event last year. I asked if it was a draft sake because it was marked as needing to be refrigerated, and they said it was once-hot. I asked if it was a fresh sake, and was told that it had been fire-aged once. It is delicious with a gentle sweetness. It is sweeter than the regular Kajiroku. I forgot to take a picture of it but I bought it 😅I will post the picture later 🤣. Kame-no-o Junmai Ginjo Gogo Polishing ratio of Kame-no-o is 55 Kame-no-o offers a variety of different rice polishing ratios, and they also had a 9% polished rice ratio. The price was 33,000 yen 😳. It is rare to find a brewery outside of Akita that uses Miso Nishiki, so I have been curious about this one for a while. When I asked him why the rice polishing ratio is 47%, he was a little confused 🤔😅After that, he said it might be because 7 is a good number 😁. He said 😁. It's a clear and beautiful sake. He said he also recommended heating it up. He said they don't make the same taste every year, they change it depending on the rice and the situation of the year.
