First, from the standing aroma. You can feel the alcohol and the acidity along with a hint of rice ear. In the mouth, a clear acidity spreads, with a grape-like nuance and lingering bitterness at the end.
I paired it with a Western-style osechi I bought at Orikape in Morioka. Personally, I think the scallop pie wrapper was the best match. The richness, sweetness, and umami of this sake increased the richness and sweetness of the sake, making the drink go further 😋.
