Yamahai Junmai from Bida, another brand name of Mitsui no Kotobuki. It is a yeast-free sake made with rice called Kokuryo Miyako (穀良都), which was restored to its original form. The first aroma is sweet and sour. When you put it in your mouth, it has a full-bodied sweet and sour taste like plum wine. The acidity is said to be over 3, but it has a sweetness that makes you want to sip it while savoring it 😋. It was also delicious warmed up.
