Polishing 55%. Aroma is quite subdued. The taste is darker and sweeter than that of As one would expect from a pure sake, it is very good with kombujime snapper carpaccio. It is also good with carpaccio of kombujime sea bream. The aftertaste and lingering aftertaste are a bit harsh. Is it oxidized?
