Echigo-zakura Sake Brewery is located near Hyoko Lake in Mizuhara, a famous swan flying site. The brewery claims to produce "table Daiginjo," and more than half of its production is Daiginjo-shu, with overwhelming cost performance due to thorough automation and efficiency.

It is mild, fresh, refreshing, and a little tangy and fresh, as is typical of nama-zake,

On Setsubun day, we served it with homemade ehoumaki (rice rolls).
Though you can't drink it while eating ehoumaki.
