Today, I met again with the branch manager of a distributor who was a great help to me when I was working as a manager in Kyoto 16 years ago.

I made a reservation for a restaurant I wanted to visit and let him know.
To my surprise, the owner of the restaurant and the branch manager's son are best friends from the same high school club!
What a coincidence!
This restaurant serves duck dishes and sake from all 45 of Kyoto's sake breweries!
Tonight, the sake selection is left to the owner!
To start things off, he brought some kind of silver tank!

At first it was cloudy, but after a while it turned into clear sake!

The new sake, which was young and rough when it was pressed, underwent a fire-quenching process just once and is now ready to drink after a period of maturation. After one summer in the bottle, the flavor components in the sake are brought out, resulting in a harmonious and mellow taste. This Junmai Ginjo Hi-ire Genshu has a slightly dry, full, and elegant flavor.
