We enjoyed listening to the stories about the brewing process of kijoshu and jusui.
Shinsei Yonotori Kijoshu
A dense, dark, full-bodied sake with just the right amount of acidity and a slight wooden vat feel. It's been a while since I've had it, but I like it.
Aladdin suggested that my entrée would go well with this sake, and so a bean cake from Demachi Futaba, a famous store with a long line in Demachiyanagi, Kyoto, made its appearance.
The rich sweetness of the sake matched well with the fine quality sweetness of the Japanese sweets, and it was indeed a SAKE DIPLOMA pairing.
Maru-san, who is not fond of kijo-zake, asked me if he could enjoy it. When I asked her to try it, she said, "Hmmm, I'm too weak. I'm sorry for being like an alcoholic.
There were many other Niimasa in the cellar.

I didn't expect to see a Yonotori and it was a coincidental pairing, but personally it was a 100 💯: ☺️
I was aware of the possibility that some of you might have a sweet tooth, so I apologize to Maru and others 😅.
