Moderate sweetness. Dry and bitter. I think it tastes stronger than usual Kaze no Mori. I prefer Omachi or Akitsuho 🤔.
I think it would be better to raise the temperature to taste the sweetness.
I feel the acidity is also emphasized when the temperature is raised.
Maybe it's sweeter at room temperature?
It has muscat and melon taste.

I heard somewhere before that Kaze no Mori's Yamadanishiki is dry and not sweet, so I was wondering if Kaze no Mori's use of Yamadanishiki would result in a dry sake quality? I was wondering 🤔
