Today we have a Sennenichi Sake Brewery's Hoto. This sake is from the northern part of Awaji Island, and this Hoto (Minori) is made by successfully growing Yamada Nishiki, which was considered difficult to produce on Awaji Island. When served cold, it has a refreshing ginjo aroma, a soft sweet and sour taste, and a crisp bitter taste with a good sharpness. When it returns to room temperature, it has a thicker taste and a more pleasant mouthfeel, The soft umami of rice, moderate sweetness, and acidity swell. It has a classic junmai sake flavor, but the moderate sweetness and acidity are elegant and cohesive, and especially when it returns to room temperature, the acidity stands out, giving it a white wine-like quality that makes it easy to drink.
