It's my first time to try a raw sake, but pure black should be a no-brainer!
The aroma is rummy.
When you drink it, it has a chili-swirling, berry-like sweetness, and the umami of the rice slowly permeates through, while it finishes crisp and clean. It's delicious and quirky.
The fire-aged version gave the impression of banana and citrus, so I wonder if it is a little different. This one has a more concentrated flavor. Both are good.
No big change after a few days.
The sweet and sourness comes in a very sharp and sharp taste, and then it is cut off.
I like this cleanness.
