And most importantly, the flavor is clear and not heavy, and because it's Jun Dai, it's very sharp and quite light to drink!
The expressiveness of the springiness is amazing, as the Koshi up to now has been heavy sweet-umami!
I paired it with some koshiabura, which I got as a gift, and it's so delicious 😭.
I think fresh, fresh, sweet, fruity, light sake like Shinshu Kamerei goes too well with tempura of wild vegetables! LOL!
