I was able to buy live flathead and sweet shrimp, so I combined them with this one: 💁‍♂️ The color is almost transparent. The aroma is sweet and mildly floral. The taste is fresh, clear, and refined in the mouth. It has a crisp sweetness and a slight bitterness with a refreshing aftertaste. The lingering aftertaste of moderate umami lasts for a long time. When drunk in a glass, the clarity is strong, while the Nanashi-nuri (boinokuchi) increases the richness, sweetness and umami. Delicious as always 😆. First, I paired it with flathead sashimi. The resilient texture and subtle sweetness combine with the umami and pleasant bitterness of this sake. Next, I paired it with amaebi sashimi🦐. It is fresh, tender, sweet and tasty ❗️ and the sweetness and umami is further enhanced by combining it with the rice wine 😋 Indeed, the sake goes on ‼️😇.
