Unusual Kijoshu of Tasake.
It's not the kijoshu I was expecting, it's not as sweet as I thought it would be, and has a sourness to it.
It's not like Shinmasa, and it's not like the sourness of summer sake.
But it's also a bit like what we're used to these days.
Why not just make it a kijoshu? I wonder if I'd be offended if I said that.
It's not what I expected, but the result is delicious 😃.
