I drink it at room temperature. It is indeed mellow and dry. Mellow and umami but with a dry sharpness. Synergistic effect of the red shellfish's string and umami 😆 More delicious and less spicy. Best match when served with red clams wrapped in seaweed 👍Great with steak 🥩.
