Three times ago I checked in for the first time in Nara Prefecture.
The brand name was Kaze no Mori 507 Akitsuho, but this time the same Akitsuho is 657♪

Sake meter degree 2.5, acidity 1.9 (reference)
The meaning of the name 657 comes from the fact that it is made with a 65% polished rice ratio and No. 7 yeast.
The previous 507 was made with 50% polished rice and No. 7 yeast.
657 is also delicious!
As was the case with 507, it is well-balanced!
What kind of balance? It is fruity, but with a refined dryness like a Japanese sake and the deliciousness of rice, while the aftertaste is light and quickly disappears.
I guess you could say that it has a complex flavor with both spiciness and sweetness 🤔.
I enjoyed it for 3 days after opening the bottle, and it is interesting to see how the sake changes its color.
At first, the fruity taste is the main thrust of the sake.
On the 2nd and 3rd day, the complexity is added to the flavor of the first day.
Kaze no Mori is so good, I want to get it again 🥰.

Really 657 is cosy 🙄It seems that until last year you could buy it for around 1100 yen...when in trouble, you must go to Kaze no Mori 🤔.
