Eikofuji" was the reason I fell in love with sake. I opened a bottle of "Crimson Glory Pink Sapphire," which I was attracted by the wine-like bottle that I had never seen before.
This low alcohol, unfiltered, unfiltered sake is brewed with 100% "Haenuki" sake rice from Yamagata Prefecture and brewed with "red yeast" and has an alcohol content of 10.5 degrees.
When poured into a cup, it has a faint pink color. The sweet and sour taste, like biting into an apricot, fills the mouth. The color and taste of this surprising sake is hard to believe that it was brewed with only rice. It reaffirms the power of yeast.

Hello Takatsugu. I was shocked when I met Eiko Fuji when I started working (about 40 years ago). I think it is because I am a descendant of Lord Kiyomasa Kato, and a sake shop I know is collaborating with me by sending me various kinds of sake rice. I look forward to seeing more in the future.
