The taste is sweet and rich, perhaps because it is an unfiltered, unpasteurized sake. My personal impression is that it has the sweetness of melon and pear, with some citrus acidity. It is a completely modern sake.
If it were my first time drinking sake, I think my impression would be quite different. Even among frequent drinkers, there may be a certain number of people who like this kind of taste. I like it a lot. It might be good with strong, salty dishes.
