It is almost colorless and transparent. It has a sweet aroma reminiscent of a lactobacillus beverage, and a slightly sour aroma reminiscent of acetic acid. The aroma is weak. The mouthfeel is relatively smooth, with a mild sourness and a moderate sweetness, with the sourness of the acetic acid type coming to the fore. In the latter half of the taste, the umami spreads slowly, and a moderate aftertaste with a mild bitterness remains.
When you start with a cold sake, you may think it is not enough, but as it gets closer to room temperature, it gets deeper and deeper. One more glass, or what? It is a sake that you will never get tired of drinking. I thought it was a refreshing sake. I thought it was "Souzake", but it was "Mellow sake".
