In Ueda, there is a terraced rice field called Inakura no tanada. This sake is made only from "Hitogokochi" sake rice grown in these terraced rice paddies. This sake is only sold at five liquor stores in Japan, but I bought it at a store directly owned by the brewery! Ah, how nice to be local! The aroma is mild. Slight lactic acidity. Slightly effervescent and sweet on the palate. More umami than bitterness. I don't know if this is a characteristic of the sake rice or the result of the brewing process, but it is a delicious sake both on its own and with sashimi. By the way, I wonder if they will accept this green bottle at the local collection? (I wonder if they will take these green bottles back to the local collection point?)
