It has been a long time since I have tasted a Tobiroki, and it is a Junmai Daiginjo. The ginjo aroma is fruity and reserved. It has a slightly strong acidity and a hint of sweetness. The alcohol is a bit harsh and gives the impression of being peculiar. Was it like this?
The peculiarity disappears when you drink it with snacks, and in a good sense, it becomes as clean as water. I bought it because I thought it would be nice to try this kind of sake once in a while, but I don't think it has enough impact to outweigh the difficulty of obtaining it or the price. It's a good sake, but I guess it's not really for me...
I'm more suited to the everyday sake that I can drink every season without fail.
