In the mouth, it has a moderate sweetness and a refreshing sourness, just like the fragrance.
The acidity disappears and the sweetness lingers.
The lingering sweetness is followed by a lingering sweetness. The fragrance is rich with a hint of ginjo.
I thought it had such an established personality that it was immediately recognizable as an Akabu sake.
My ability to express myself is not up to par, so I thought I would use the expression "Akabu-like" for the aroma and taste... 🤪.
