The booth of Fukumochi Sake Brewery and Tenka Nishiki.
The brewery's toji, Seijiro Hane, is a former system engineer who changed his job to preserve the brewery. Although the brewery's story is well known, this was the first time I had the opportunity to meet him.
Mr. Hane is from Suita, so he talked a little about Osaka. The Otsuki Sake Shop, which handles the sake, is located in Suita.
Tenkashinishiki BASIN #2 Junmai Ginjo
A stylish label we have never seen before, it has been around for about five years. It is made with white malted rice and malic acid rich yeast. It has a gentle sourness. It is very wine-like and delicious.
◉Tenshita Nishiki Junmai Daiginjo
The taste is sweet and delicious. ◉Tenga Nishiki Junmai Daiginjyo, a very sweet and tasty wine, with a beautiful and umami taste. My favorite type.
Tenga Nishiki Junmai Ginjo Hi-ire
A little sake-like, but slightly sweet and sour. A sweet and sour type of sake.
It is made by a single brewer, so production is said to be extremely small.
