Tamagawa, which I fell in love with at Ice Breaker.
Here is another Junmai, Yamahai-fujikomi that I was curious about.
It has a nice rice flavor, followed by acidity,
It has a good sharpness and is a very peculiar sake in a very good sense.
I thought it should be warmed up, so I warmed it up to the highest temperature.
When warmed, it has acidity but a sweetness that gives it a slightly rounded flavor.
It is delicious both chilled and warmed.
