One of the sake I got when I visited Iwakuni City at the end of last month 🍶.
I've been drinking Daiginjo-Saito no Shizuku since the last time I was in Iwakuni.
This one is a Junmai Ginjo Nama Genjyo.
Polishing ratio 55%.
Alcohol content 17%, a bit high.
The ginjo aroma can be felt and there is a gaseous sensation in the mouth. The umami of the rice is well expressed, and it has a nice dryness that makes it crisp ✨.
A delicious sake that is savored not for its acidity or sweetness, but for its umami.
Not too assertive like the previous Daiginjo, simpler and more stable taste 😊.
I had it with peperoncino clams and salad 🍝.
