I asked for a brand I'd never tried before.
It was my first time to try Sakanishiki, a type of sake rice.
It has a light aroma of koji.
It is dry, but the flavor is soft.
It doesn't feel too dry.
The acidity on the finish makes it crisp.
The sashimi of striped bass went perfectly with it.
3.5 stars.
