We visited the new sake festival of Santan Masamune 😁.
There were a lot of people who are fans of Yamatan Masamune and it was pretty exciting👍.
Since it was my first time to try their sake, I decided to try all kinds of sake at a paid tasting. Here is a summary of my impressions.
Freshly squeezed new sake
Needless to say, it is fresh and has a strong acidity.
Honjozo Shimanami
(1) Honjozo Shimanami has a dry taste with an aroma that is a bit like Honjozo poi or a barrel sake.
(2) Super dry, dry and light.
It is light and dry, and quite refreshing. It is easy to drink and has little habit.
(3) SHIZUKUHIME Junmai Ginjo
Not much aroma. It is a junmai with a strong alcohol taste, but the alcohol feeling spreads to the palate and the taste is firm.
4) Ginjo-shu
Fruity aroma, the opposite of the aroma is the spiciness that stands out.
5) Junmai Daiginjo Matsuyama Mitsui
The ginjo aroma spreads widely. Overall, the taste was refreshing and well-balanced with sweetness.
It seemed to be the most popular.
(6) Daiginjo-shu
It has a ginjo aroma, but it was a little restrained, and the overall impression was very similar to that of ⑤.
⑦Shizukudori Junmai Daiginjo-shu
Surprisingly, the aroma is not so strong, (the aroma itself!) The sweetness is strong and the overall taste is dark.
(8) Natural old sake
Old sake but easy to drink, coffee-like aroma, suitable for aperitifs, but drinkable normally
