Hakutsuru-nishiki" is a rice suitable for sake brewing developed by Hakutsuru Sake Brewery to surpass Yamadanishiki, the king of sake rice. Many sake breweries that boast high name recognition and technical capabilities have started brewing sake using Hakutsuru-Nishiki, and are producing excellent sake. Amego no Tsuki" has also produced a sake that makes the most of Hakutsuru-Nishiki's light, daiginjo-like flavor.
