I took a day off today and went to a spa ♨️ really healed my mind and body 😌I opened this one as soon as I got home💁. The color is creamy yellow. The nose is grain-like with a hint of alcohol. In the mouth, there is an aroma of ears of rice that have been dried in the sun, and alcohol escapes through the nose. Finally, the umami flavor spreads with a full-bodied taste. It is a sake that can be liked or disliked. I like it myself. First, with the last of this year's black bean edamame (edamame) from Okayama Prefecture. The richness and umami of the black beans further brings out the umami and spiciness of this sake and turns it into a sake-like flavor. This is delicious 😋. Next, chicken tsukune with sudachi and sansho (Japanese pepper). Since this sake has a unique flavor, adding a punch of sudachi and sansho adds complexity to the taste, and the sweetness is brought out and the acidity stands out nicely.
