bouken
Eight year old unpasteurized sake. The label is very retro. I don't know if it's brewed in Shiga or Kobe, but they must have brewed it in Kobe because it says "factory". It's sour like white koji and has a faint aroma of aging. It's very clear that the aroma of maturation comes out clearly after 8 years. It's a unique and interesting sake.

8 years ago is 2012.... I used to drink a little but I wasn't interested in sake at the time. I was only drinking shochu or awamori

If Zuisho Black Pine Swordfish were raw, would it taste like this? I thought.
