Aroma: Aroma of a crisp. It's like a Jyushidai. Elegant and beautiful, but with a rich umami flavor. Lovely. The kombu-shime of the flatfish with a lot of umami, topped with a sour nagamo. Complex umami. A marriage of umami 😆 Finished with asparagus greens and shiso rice. A very satisfying lunch ✨.

The lunch of kombujime (flatfish with kombujime) and other dishes looks very delicious 😊.
