A little astringent when opened? Bitterness? I thought the bitterness might be a little bit of an issue, but after a few days of drinking it, it seemed to have become rounder. It is dry, but the umami of the rice is also present and it is satisfyingly dry. Alcohol 16 degrees Delicious and intoxicating.
