I remember that I bought one last year that I haven't had. I want to do something about the fact that when I see Akabu's seasonal sake, I end up buying it. The cherry blossoms are over in terms of time, but I opened the bottle. The aroma is sour. A hint of citrus? When you drink it, you get a chiri-shuwa, sweetness and sourness like 🍊mikan, and a clean umami. As usual, the liquid quality is very smooth and easy to drink. Of course the aroma and taste are great, but it is this lack of hookiness that makes Akabu so special. Even after a few days, it is still delicious. There is still some chili, and the sweet and sour taste makes it easy to drink, and it ends up being refreshing. The low alcohol content, sweet and sour, and the spring sake was just as I had expected.
