Junmai Ginjo sake with a rice polishing ratio of 50%.
If you look it up, you'll find that the name of this sake, "Yasuke", refers to sushi in the Hanayagikai. Its roots go back to the Joruri and Kabuki play "Yoshitsune Senbon Zakura". Taira no Koremori, the grandson of defeated general Taira no Kiyomori, escaped from the battle of Minamoto and Heike and fled to a sushi restaurant. His pseudonym "Yasuke" later became the origin of the word "Yasuke" for sushi in the willow world. Therefore, the concept of Hidakami Yasuke is "Good match with seafood" and "If you do it with fish, it's Hidakami! If you're going to do it with fish, do it with Hidakami!
When poured into a glass, it has a calm and slight ginjo aroma. The first impression when drinking it is a crisp and sharp taste. There is no flashy ginjo scent or fruity taste at all, and it is modest, but it has the sweetness and flavor of the rice. It's a sake that doesn't interfere with the fish it's served with, especially white meat fish.
This time we paired it with local Hokkaido flounder, bluefin tuna, and striped bass.
