This is a rare sake rice, Koso-Shinko. Until 1989, it was the only rice suitable for sake brewing in Yamagata Prefecture, but in recent years it has almost disappeared. ❗️
It took 4 years to harvest 120 bales of this rice and brew only one tank of it.
And with the sake polished to 30%, you can't help but pay a little more for it 🥲.
I opened the bottle and drank it first, but there is almost no gasiness, so it might be too strong in this heat.
I drank a couple of highballs first, and when I was comfortably drunk, I drank again 😊.
Well, it's a very elegant sake: ❣️
The sweetness and umami swell up in the mouth and then it quickly fades away.
It must be a good sake.
It is an expensive sake made from only the core of rice.
But something is missing for me.
I always buy Kudokibe for less than 2,000 yen, but I have the impression that it tastes better.
Maybe I need to train my tongue more😅
