The taste is like green melon.
The aroma is gorgeous, with a hint of alcohol and rice malt, a moderate sweetness, and a firm rice flavor that spreads with some viscosity, followed by a refreshing acidity, a slight bitterness, and the dryness of the alcohol.
It is rather floral, but not too sweet, and the dryness of the alcohol makes it refreshing and goes well with meals. It is more suitable for a meal than as a stand-alone sake.
After the second day, the sweetness increases and the dryness of the alcohol becomes milder.
It went well with the eggplant and shishito pepper tataki from the balcony garden (a copy of the recent "Secret Kenmin Show") and the fresh lamb Genghis Khan.
It also went well with homemade nigiri nigiri with tuna and somen noodles.
