The first drinking gruel of the new year is a Junmai Daiginjo zodiac label of Tenryo, the main brand of Tenryo Shuzo located in Hagiwara, Gero City.
I visited the brewery and purchased this bottle when I went to Gero City half a month ago to collect Oyuin (a seal of approval) for the hot springs there.
It is made from 100% Hida Homare, Hida's specialty rice for sake brewing.
The aroma is a mellow ginjo aroma like wine.
The palate is full of rich umami and sweetness with a refreshing acidity, and a pleasant alcohol taste that reaches the back of the nose.
It finishes with bitterness.
It has a different feel from Hinoya, which is another brand.
We are grateful to have encountered a good sake.
