The other day, we took my parents-in-law on a World Heritage tour of Koyasan and Kumano Sanja. This is a souvenir of that trip, Kurogyu Junmai Sake. Since I was the driver, I refrained from drinking during the trip, and I wanted to buy various Wakayama sake as souvenirs, but my refrigerator was full of sake, so I brought back one cup of sake🥲. Kuro-ugyu🐃 is a sake from Nate Sake Brewery in Kainan City, Wakayama, and I thought it was related to cows, but it was called Kuro-ugyu-gata because 1200 years ago, when many rocks were hidden by waves in the inlet of Kainan City where Nate Sake Brewery is located, a big black rock looked like a black cow. 😅 This sake is made by a brewery specializing in Junmai brewing, which aims to make sake that remembers the old days of Manyo. First, it is served cold. The appearance is crystal with gold tints. The aroma is subdued, with an alcoholic aroma reminiscent of rice cake and the sweetness and sourness of rice. The taste is smooth on the tongue, with a gentle rice sweetness and umami, followed by a firm acidity that spreads crisply and finishes crisply. Serve warm. The aroma is of freshly cooked rice.
