If you think it's a raw sake, it's a freshly stored sake. It has a rough and wild taste. The sweetness, umami, bitterness, and spiciness are well balanced. I prefer the Junmai Unfiltered Nama-junshu, which has a fruity taste but a strong sweetness.
I can taste more sweetness if the temperature is closer to room temperature, but it has a unique peculiar flavor.
It has a unique aroma like barley 🤔.
